Recipe Ingredients for Vegetable Chowder

4 cups potatoes
3 tbsp canola oil
1 medium onion
2 tsp ginger
1 1/2 cup carrots
1 1/2 cup celery
1 cup turnip
2 1/2 cups stock
6 cups water
2 tsp oregano, dried
2 1/2 tsp parsley, dried
1 salt and pepper to taste

Recipe Directions for Vegetable Chowder

  1. Boil 2 cups of potatoes

  2. Mash

  3. sauté all other veggies except for potato and turnip

  4. add stock and water, oregano and parsley

  5. boil

  6. add salt and pepper to taste
