It's not meat chili, it's not bean chili, it's vegetable chili.

Recipe Ingredients for Vegetable Chili

2 tablespoons olive oil
2 medium-sized onions, chopped
2 medium-sized carrots, cut into 1/2-inch pieces
2 tablespoons minced garlic
2 tablespoons chili powder
2 tablespoons ground cumin
1/2 pound potatoes, cut into 1/2-inch pieces
1 green bell pepper, cored, seeded and cut into 1/2-inch pieces
1 yellow bell pepper, cored, seeded and cut into 1/2-inch pieces
1 red bell pepper, cored, seeded and cut into 1/2-inch pieces
56 ounces diced tomatoes (2 28-ounce cans)
1 tablespoon tomato paste
1 tablespoon brown sugar
2 teaspoons dried oregano
1 teaspoon fennel seeds
2 yellow squash, halved lengthwise, seeded and cut into 1/2-inch pieces
2 medium-sized zucchini, trimmed and cut into 1/2-inch pieces
1/2 cup chopped flat-leaf parsley
1 teaspoon black pepper
15 ounces garbanzo beans (1 can)
15 ounces kidney beans (1 can)
2 tablespoons fresh lemon juice

Recipe Directions for Vegetable Chili

  1. Place the oils in a heavy pot over medium heat. Add the onions and carrots and cook, stirring, for 10 minutes, adding the garlic in the last 2 minutes. Reduce heat to low; stir in chili powder and cumin. Cook 1 minute longer.

  2. Stir in the potatoes, bell peppers, canned tomatoes, tomato paste, brown sugar, oregano and fennel seeds. Bring to a boil, reduce the heat to medium and simmer, partially covered, for 25 minutes, stirring occasionally.

  3. Add the squash, zucchini and parsley. Season with salt and pepper and adjust the other seasonings. Stir in the garbanzo beans. Simmer, uncovered, for 20 minutes longer, or until the vegetables are tender, stirring occasionally. Stir in the lemon juice.
