Delicious Soup for winter eating

Recipe Ingredients for Vegetable and Chickpea Curried Soup

1 tbsp oil
3/4 cup chopped onion
1/2 cup sliced carrots
19 oz can chickpeas
3/4 cup baking potato
1/2 chopped green bell pepper
14 1/2 oz can tomatoes
6 oz vegetable broth
300 gram frozen chopped spinach, thawed
1/2 cup coconut milk
1/2 tsp chopped ginger
1 tsp chopped garlic
1/2 tbsp curry powder
1 tsp brown sugar
1/2 tsp salt
1/4 tsp pepper
1/8 tsp cayenne

Recipe Directions for Vegetable and Chickpea Curried Soup

  1. Saute onions and carrots in oil for 5 minutes

  2. Add ginger and garlic and combine

  3. Stir in curry powder with sugar and cook for 1 minute

  4. Place onion/carrot mixture in crockpot with everything else, except spinach and coconut milk

  5. Cook on high for 4 hours, stirring occasionally

  6. Check for doneness

  7. Stir in coconut milk and thawed spinach
