Recipe Ingredients for vegetable-cheese-ragda

1 cup chopped onions
1/2 cup shredded carrots
1 cup diced green pepper
2 cups sliced mushrooms
1/4 cup fat free chicken broth
1 tsp extra virgin olive oil
1 egg
1/3 cup egg whites
1 1/2 cups 2% cottage cheese
1 tsp cornstarch
2 tbl grated parmesan cheese
1/4 tsp dry mustard
1 cup low fat cheddar cheese
1/2 cup whole milk ricotta cheese

Recipe Directions for vegetable-cheese-ragda

Saute veggies with broth and olive oil. Mix egg,egg whites,cottage cheese,ricotta cheese,cornstarch,parmesan cheese in blender til smooth, stir in mustad and veggies, top with parsley and bake at 350 for 35-40 minutes.
