Quiche-like side dish -- delicious.

Recipe Ingredients for Vegetable Cheese Pie

10 ounce frozen chopped spinach
16 ounce low fat cottage cheese
8 ounce shredded cheddar cheese
4 eggs
2 cups shredded zucchini
1 sweet red pepper, chopped
8 ounces sliced mushrooms

Recipe Directions for Vegetable Cheese Pie

Thaw spinach and squeeze out excess water. In large skillet, combine shredded zucchini, red pepper and mushrooms; saute until softened; drain excess water. In large bowl, mix cheeses, eggs and spinach. Season to taste with salt and pepper. Add zucchini mixture to cheese mixture. Pour into 9 inch pie plate. Bake at 350 45 minutes or until set. Let sit 10 minutes before serving.
