I used dairy free butter and as little cheese and I can possibly get away with (or tofu cheese) to make this a vegan dish.

Recipe Ingredients for Vegetable Canelloni

100 g pasta
1 sweet potato
1 potato
1 onion
1 tsp rosemary
1 tsp garlic
1 tsp margarine
200 g tomatoes
2 tsp cheese

Recipe Directions for Vegetable Canelloni

  1. boil your potatos and mash them

  2. dice onion and combine vegetables, spices, margarine.

  3. spoon into canelloni tubes and lay out in a baking dish

  4. cover with minced tomatoes and cheese

  5. bake for twenty minutes.

  6. serve with salad
