Recipe Ingredients for Vegetable and Butterbean Hotpot

80 grams Carrot
150 grams Celery
450 grams Sweet Potato
400 grams canned Tomatoes
1 tablespoon Olive oil
10 grams Stock Cube
250 ml Water
30 ml Red Wine
1 tablespoon tomato puree
2 tablespoons paprika
5 grams garlic
1 tablespoon dried Thyme
410 grams Butter Beans

Recipe Directions for Vegetable and Butterbean Hotpot

  1. In a pan heat oil and fry chopped celery, chopped carrot and diced sweet potato 5 minutes until starting to soften and caramelise. Add paprika, crushed garlic and Thyme. Fry for a further 1-2 minutes.

  2. Add canned tomatoes chopped, stock made with hot water and stock cube, tomato puree and wine, bring to the boil and simmer for 10 minutes.

  3. Add the drained washed butterbeans and simmer for a further 10 to 15 minutes with the lid off.

  4. Serve with boiled rice or side dish of your choice.
