Recipe Ingredients for Vegetable Brisket Stir Fry

1 tbsp minced garlic
1 tbsp Thai fish sauce
1 tbsp lemon juice
1 tbsp chicken stock, fat free
2 oz celery, sliced
2 oz zucchini, thinly sliced
2 oz red onion, sliced then halved
2 oz mushrooms, sliced
2 oz sweet pepper, red, sliced
1/4 c cilantro leaves
2 oz Beef, Brisket, Flat Half, lean only

Recipe Directions for Vegetable Brisket Stir Fry

  1. Slice raw vegetables thinly, and coarsely chop coooked brisket.

  2. Pour lemon juice, Thai fish sauce and chicken broth in skillet or wok over high heat. When bubbling, add minced garlic and saute for 30 seconds.

  3. Add raw, sliced vegetables to pan. Saute for 1 1/2 to 2 minutes depending on thickness of vegetable slices. Add cooked brisket to vegetables, and saute just until meat is hot and vegetables are tender crisp, about 30 seconds more.

  4. Transfer to dish with slotted spoon, mix in fresh raw cilantro leaves, and serve immediately.

  5. Makes one large portion with only 200 calories.
