Get several servings of vegetables in this yummy breakfast casserole. Next time I will try putting the shredded potatoes on the bottom of the pan and pouring the mixture over the potatoes. This will make it more like a traditional frittata.

Recipe Ingredients for Vegetable Breakfast Casserole

4 eggs, beaten
1 potato, shredded
1/2 onion
1/2 bell pepper
1/2 cup broccoli
1/2 cup carrots
2 roma tomatoes
1 tbsp olive oil
1/2 cup whipping cream
1/2 cup feta cheese

Recipe Directions for Vegetable Breakfast Casserole

  1. Saute just until wilted the onion, bell pepper, broccoli and carrots in a skillet with the olive oil.

  2. Meanwhile, combine remaining ingredients (except for the tomatoes) in a large bowl.

  3. Slice the roma tomatoes.

  4. Add the roma tomatoes and the skillet mixture to the mixtuer in the large bowl.

  5. Stir well.

  6. Season to taste.

  7. Pour the mixture into a greased baking dish.

  8. Bake for approximately 35 minutes in an oven preheated to 385 degrees. It's ready once the center no longer "jiggles."
