A great way to have a healthy, filling, delicious breakfast! Vegetables, Goat Cheese and Egg make this a hearty meal.

Recipe Ingredients for Vegetable Breakfast Casserole

8 Eggs
6 oz. Goat Cheese
1 zucchini
1 squash
1 red onion
2/3 cup of shredded cheddar cheese
3 tbs. extra virgin olive oil
1 tbs. italian seasoning

Recipe Directions for Vegetable Breakfast Casserole

  1. Sautee zucchini, onion and squash with olive oil and italian seasoning.

  2. Mix up the veggies, goat cheese and 1/3 cup cheddar cheese in a baking dish.

  3. In a bowl, scramble the eggs. Pour eggs over the casserole.

  4. Top with second 1/3 cup cheddar cheese.

  5. Cover with foil and bake at 350 for 45 minutes. Uncover and bake for an additional 5-15 minutes until cooked through.

  6. Note- you can substitute fat-free cheddar cheese for even less calories, or use a variety of vegetables that are in season. This is great microwaved and I often make one casserole for a whole work-week of breakfasts.
