This is a heathlful soup full of dark leafy greens, and garlic. For extra health benefits, use fresh herbs!

Recipe Ingredients for Vegetable Black Bean Soup

4 cups Chicken Broth
2 med potatoes
8 cups Collard Greens
1 1/2 cups zuccini
1 1/2 cups mushrooms
16 oz Hunts tomato sauce (no Salt)
19 3/4 oz canned black beans
1 onion
4 cloves garlic
1 tablespoon of olive oil
3 tablespoon of Italian seasoning
1 tsp sea salt

Recipe Directions for Vegetable Black Bean Soup

  1. Saute onion and garlic in olive oil.

  2. Add collard greens, mushrooms, and zuccini. Cook for ~10 mins. add seasonings and cook for 5 more minutes.

  3. Add broth, finely cut potatoes, canned beans and tomato sauce.

  4. Cook until done
