Recipe Ingredients for Vegetable Birynai with Cashews

1 tbsp. olive oil
3 cloves garlic, minced
1 red onion, diced
1 tsp. ginger
1/2 c. chopped cashews, divided
170 g. (1/2 c) soy yogurt, plain
1 tbsp. curry powder
1 c. cauliflower
1 c. broccoli
2 c. green beans
1 c. carrots
2/3 c. water
1 c. peas
2 c. rice, cooked
2 tomatoes, cut into wedges
1/2 c. sliced jalapeno

Recipe Directions for Vegetable Birynai with Cashews

  1. Preheat oven to 350 degrees.

  2. Heat oil in a large pot over med-high heat. Add garlic, onion, ginger, half of the cashews, salt and pepper, and cook, stirring often and adding a splash of water whenever the mixture sticks to the pot, until deep golden brown and soft - about 15 minutes.

  3. Add yogurt and curry and cook until thickened, about 2 - 3 minutes. Stir in vegetables (except the 2 tomatoes), water, salt and pepper, cover, and simmer until vegetables are tender but not cooked through - about 5 minutes. Remove pot from heat, transfer mixture to a casserole dish, and stir in peas.

  4. Arrange rice over vegetables in casserole dish, cover with foil and a tight-fitting lid, and bake in oven until rice and vegetables are tender - about 20 minutes. Uncover, transfer contents of dish into a large bowl, and toss together gently.

  5. Garnish each serving with remaining cashews, tomato wedges, and sliced jalapenos.
