Curry Scented Vegetarian Rice Dish

Recipe Ingredients for Vegetable Biryani

3/4 cup Organics Green Lentils Dry
2 1tsp Olive Oil
2 medium Carrots
2 clove Garlic
1 oz Curry Paste
2 cup Cauliflower
0.25 tsp Salt, Table
0.25 tsp Pepper, Black
1 cup Rice Basmati
1/4 cup Raisins
20 fl oz Organic Low Sodium Chicken Broth
1 cup Shelled Edamame
0.25 cup, sliced Almonds

Recipe Directions for Vegetable Biryani

  1. In saucepan of boiling water, cook lentils for 10 minutes, drain.

  2. Meanwhile in Dutch oven over medium-high heat; saute onion until deep golden, about 6 minutes.

  3. Add carrots, garlic, curry paste, salt and pepper; saute until fragrant, about 3 minutes. Stir in cauliflower, rice, raisins and lentils to coat.

  4. Add broth; bring to boil. Reduce heat and simmer, covered, until rice, lentils and veggies are tender, about 20 minutes. Stir in edamame (or frozen peas if preferred) and cook until heated through, about 4 minutes. Sprinkle with toasted almonds.
