This beef stew has about double the vegetables and half the beef of other recipes I found.

Recipe Ingredients for Vegetable Beef Stew in Crock Pot

2 1/2 large Onions
1 tbsp Butter
4 1/10 stalk, large (11"-12" long) Celery
2.12 Potato large (3" to 4-1/4" dia) Potatoes, Russet, Flesh And Skin
4 3/8 large (7-1/4" to 8-1/2" long) Carrots
18 1/4 oz Beef Stew Meat
1 tbasp Safflower Oil, Refined, Organic
1/2 tsp Pepper, Black
1/4 cup Wheat Flour, White, All-purpose, Enriched, Bleached
1 tsp Garlic Salt
4.67 clove Garlic
32 fl oz Organic Free Range Chicken Broth

Recipe Directions for Vegetable Beef Stew in Crock Pot

  1. Dice onion and saute in butter on medium high heat until brown, add to crock pot

  2. Deglaze pan with 1/4 cup water and add liquid to crock pot

  3. Dice celery and add to crock pot

  4. Dice potato to about 1/2" and add to crock pot

  5. Chop carrots and add to crock pot

  6. On a plate stir together 2T flour, pepper and garlic salt

  7. Dredge beef in flour mixture

  8. Heat safflower oil over medium high heat

  9. When pan is hot, sear beef in two batches and add to crock pot

  10. Deglaze pan with 1/4c water and add liquid to crock pot

  11. Coarsely chop garlic and add to crock pot

  12. Add chicken broth to crock pot, plus water to cover ~2 cups

  13. Add 5 bay leaves to crock pot

  14. Turn crock pot to high for one hour then down to low for 6-8 hours

  15. Discard 5 bay leaves

  16. Stir 2T flour into 1 cup of the liquid, mix well and return to crock pot

  17. Allow to thicken, then serve
