I make the basic vegetable base ( tomatoes, corn, okra and green beans) from the vegetables in my garden and freeze it in quart bags, then all I have to do is add the other ingredients for a pot of soup.

Recipe Ingredients for Vegetable Beef Soup

8 cups tomatoes
1/3 cup okra
1/3 cup green beans
1/3 cup corn
3 medium potatoes
2 carrots, diced
16 oz beef, ground round
1 onion
1 tsp garlic, minced
1 tsp salt
1 tsp pepper
2 cups water

Recipe Directions for Vegetable Beef Soup

  1. Cook ground beef in a skillet, crumbling into small pieces. Drain grease and rinse beef under hot water to remove all the grease. Set aside.

  2. Cook potatoes onions and garlic in water until potatoes are tender. Add vegetable soup base and other ingredients including beef. Simmer for 20 minutes to get all the flavors mingled.
