Recipe Ingredients for Vegetable Beef Soup

12 oz Beef Stew Meat
5 serving Made from Roasted Beef and Concentrated Beef Stock Beef Base
2 cup Stewed Tomatoes, Original Recipe
16 oz Vegetables, Mixed
1 large (3" to 4-1/4" dia.) Potatoes, Boiled
1 medium (2-1/2" dia) Onions
1 stalk, medium (7-1/2" - 8" long) Celery
1 tbsp Extra Virgin Olive Oil

Recipe Directions for Vegetable Beef Soup

Heat oil in large pot then brown stew meat. Add diced onion and celery, cook about 4 minutes. Add in can of stewed tomatoes. Smash the tomatoes with a masher. Add about 8-10 cups of water then 5 tsp of better than bouillon. Bring to boil, then boil for about 5 minutes. Add frozen mixed vegetables and bring back to boil. Boil for another five minutes then add diced potato. Boil for another 5 minutes then reduce to a simmer. Simmer about 20 minutes and it's ready to serve.
