Recipe Ingredients for Vegetable Beef Soup

1 cup, chopped Peppers, Sweet, Red
5 cup No Salt Added Fat Free Beef Flavored Broth
20 oz raw Beef Stew Meat
3 potato small (1-3/4" to 2-1/2" dia) Potatoes, Red, Flesh And Skin, Baked
1/2 cup Peas, Green
0.75 cup slices Carrots
0.5 medium raw Onion Yellow
1 cup, diced Celery
3 cloves, raw Garlic
2 tsp Oregano, Ground
2 tsp, leaves Thyme, Dried
2/3 cup Frozen Supersweet Cut Corn
1 cup Beans, Snap, Green
1 cup (8 fl oz) Water
1 tbsp Olive Oil

Recipe Directions for Vegetable Beef Soup

  1. Chop all vegetables to desired size.

  2. Sear beef over medium-high heat in 1 tablespoon olive oil, thyme and oregano. Remove the meat and set aside.

  3. Cook onion, garlic, celery, and carrots in the remaining olive oil until soft.

  4. Add remaining vegetables and heat through.

  5. Add meat, broth and water and heat through to a boil. Reduce heat to low and let simmer for about 30 minutes, or until meat and potatoes are cooked entirely.
