This is a paleo-style veg soup--no sugar, corn, peas, or potatoes

Recipe Ingredients for Vegetable Beef soup

14 oz tomatoes, diced
1/2 cup onions, diced
1/2 cup carrots, diced
1/2 cup celery, diced
10 mushrooms, sliced
1 1/2 cup green beans, chopped
1 1/2 cup swiss chard, chopped
1/2 lb stew beef
2 cloves garlic
1 small zucchini, chopped
6 cups low sodium chicken stock
1 pinch dried thyme
2 tbsp olive oil

Recipe Directions for Vegetable Beef soup

Brown meat, remove. Sautee mirepox and garlic. Add mushrooms and green beans. Add can of tomatoes and then the chcken stock. Simmer covered for 30 minutes. Add chard and zucchini, add thyme. Simmer at least another 30 minutes.
