This is just an old fashioned vegetable soup that I make. I have left it unsalted, and others can salt it to taste.

Recipe Ingredients for Vegetable beef soup

7 ounces stew beef
1 clove garlic
1 onion
4 carrot
6 ounces corn
6 ounces black beans
6 ounces peas
1/2 cup chopped spinach
1/4 cup chopped parsley
1/2 tsp thyme
4 cups low sodium chicken broth
4 cups water
1 pint canned tomatoes
1/2 tsp black pepper
1/4 tsp red pepper flakes

Recipe Directions for Vegetable beef soup

  1. Cook beef in slow cooker until close to tender. Use 1 cup low sodium vegetable or chicken broth to cook the beef.

  2. Add all vegetables, tomatoes, broth, and water, and cook in slow cooker until the vegetables are tender, but not mushy.
