This is my Dad's vegetable soup. This vegetable beef soup is ten times better than anything you can get in a can. A healthy, hearty comfort food.

Recipe Ingredients for Vegetable Beef Soup

1 1/4 lbs beef stew meat
1 tbsp olive oil
3 cups beef broth
3 1/2 cups tomato juice
3 cups water
1/4 cup red wine
1 onion, chopped
3 carrots, peeled and chopped
2 celery stalks, chopped
3 red potatoes, diced
2 cloves garlic
3 cups cabbage, chopped
1 1/4 cup frozen corn
2 cups mixed vegetables
1 cup lima beans
2 large tomatoes, chopped
2 beef bouillon cubes
2 tsp dried basil
1 tsp dried oregano
1 1/4 tsp salt
1/2 tsp pepper
2 cups macaroni, cooked

Recipe Directions for Vegetable Beef Soup

Heat olive oil in large stock pot. Add onions, celery, and cabbage and saute until soft. Remove vegetables from pot and add beef. Saute until brown on all sides. Add white wine to de-glaze pot. Add onion mixture back to pot and saute few more seconds. Add remaining ingredients to pot (except pasta) and bring to boil. Add a bay leaf or two for seasoning (the recipe builder did not recognize bay leaf). Once boiling, reduce heat to simmer and simmer for approximately one hour or until all vegetables are tender. Add cooked macaroni (I like small bird's eye noodles, but any kind can be used).
