Recipe Ingredients for Vegetable Beef Soup

1 1/2 tbsp Extra Virgin Olive Oil
1 cups diced onion
2.88 lbs. stew meat
24 oz. low sodium chicken broth
6 cups diced russet potatoes
3 cups diced celery
46 oz. V8 juice
2 1/2 cups carrots
8 cups shredded cabbage
2 cups frozen green beans
2 cups frozen lima beans
2 cups frozen corn
3 cups stewed tomatos

Recipe Directions for Vegetable Beef Soup

  1. Brown meat with onions

  2. simmer in chicken broth

  3. add in v8 and tomatoes

  4. add in seasonings you want
