I use leftover roast beef to make this.

Recipe Ingredients for Vegetable Beef Soup

1 teaspoon vegetable oil
1 onion, coarsely chopped
1 garlic clove, minced
2 large carrots, diced
2 stalks celery, sliced thin
2 cups beef broth
1 1/2 cups water
14 oz diced tomatoes
1/4 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon pepper
1/2 lb cooked chuck roast, cubed (at least)

Recipe Directions for Vegetable Beef Soup

  1. In a soup pot, saute onion, carrots & celery over medium heat in oil until softened.

  2. Add garlic and cook for 1 minute.

  3. Add beef broth, tomatoes, thyme, salt, pepper and meat.

  4. Cook at a simmer for 1 hour.
