Recipe Ingredients for Vegetable Beef Soup

1 lb lean ground beef
3 cups diced celery
1 onion chopped
2 cups diced carrot
1 tablespoon olive oil
1 tablespoon salt
1/2 tablespoon pepper
1 oz. bourbon
29 oz diced tomatos
29 oz green beans
15 oz can corn
3 diced medium red potatos
4 cups chicken broth
4 cups water

Recipe Directions for Vegetable Beef Soup

Saute carrot/onion/celery in olive oil until soft. Add ground beef and cook until brown. Add bourbon to deglaze pot. Cook til alcohol is gone- about 5 minutes. Add canned veggies, potatoes, broth, water, S/P to taste. Cook until potatoes are soft - about 30 minutes.
