Recipe Ingredients for Vegetable Beef Soup Minus the bouillon cubes

4 tbsp olive oil, split
1 can low sodium beef broth
2 medium potatoes, peeled & chopped
1 large onion, chopped
1 lb round steak, trimmed & cut into 1/4? pieces
2 tbsp minced garlic, minced
2 tbsp ginger
2 ? 28oz cans whole or diced tomatoes (quarter whole tomatoes)
1/2 head green cabbage, chopped in 1? pieces
2 cups fresh carrots, chopped in 1/2? pieces
2 cups celery, chopped in 1/2? pieces
64 oz V8 juice, (Large bottle) Low sodium (or tomato juice)
1 can tomato paste, no salt added
2 medium zucchini, cubed
8 oz green beans, frozen
2 oz frozen corn, 1/2 (4 oz pkg)
1 tbsp garlic powder
2 tbsp coriander powder
2 tbsp celery powder
2 tbsp cinnamon
1 tbsp black pepper

Recipe Directions for Vegetable Beef Soup Minus the bouillon cubes

  1. 1. Heat large stock pot to medium high heat. Add 2 tablespoons olive oil. Add beef to pan, saute until browned only. Do not cook through. Remove from pan and set aside.

  2. 2. Add onion and saute 7-10 minutes until caramelized. Add garlic & ginger, cook for 2-3 minutes. Add beef back to pan.

  3. 3. Add tomatoes, with juice from can. Add cabbage & cook 5 minutes until cabbage reduces.

  4. 4. Add remaining ingredients and cook until potatoes are soft. The remaining vegetables will be al dente.
