A hearty, healthy soup. Use any vegetables you have on hand, and substitute barley or rice for the lentils if desired. (Quantities are all variable, listed as specific just to get an accurate calorie count of my current batch!)

Recipe Ingredients for Vegetable beef soup (lower sodium)

24 oz Low Sodium V8 100% Vegetable Juice
64 oz Beef Broth
29 oz Petite Diced Tomatoes - No Salt
0.5 cup Red Lentils
107 7/10 grams Carrots
1 medium Squash, Summer, Zucchini, Includes Skin
2.6 oz Peppers, Sweet, Yellow
7.1 oz Yellow Onion
5.2 oz Celery
2.1 oz Broccolini
16 oz Laura's 92% Lean Ground Beef
2 cup (8 fl oz) Water
3 Teaspoon Thyme

Recipe Directions for Vegetable beef soup (lower sodium)

Saute beef until no longer pink; saute onions and peppers until soft. Combine beef, peppers, onions and all other ingredients. Bring to a boil for 20 minutes, then simmer for several hours.
