Recipe Ingredients for Vegetable beef soup with hamburger

28 oz Diced Tomatoes, No Salt Added
16 oz Ground Beef - 85% lean
1 1/2 medium (2-1/2" dia) Onions
3 carrot (7-1/2") Carrots
2 stalk, large (11"-12" long) Celery
1 cup Pearl Barley
6 cup Beef Broth
10 1/2 oz Tomato Soup
2 cup (8 fl oz) Water
16 oz Essential Antioxidants V8 100% Vegetable Juice
3 teaspoon Thyme
2 leaves Spices Whole Bay Leaves

Recipe Directions for Vegetable beef soup with hamburger

  1. Dice carrots, celery and onion

  2. Spray a skillet with cooking spray and saute onions until soft

  3. Remove onions from skillet and add hamburger to skillet; saute until cooked through; remove meat and drain on paper towel.

  4. Combine all ingredients, including cooked onions and beef, in a large dutch oven or pot (the recipe makes a lot of soup!)

  5. Bring to boil and boil gently for 20 minutes to cook vegetables

  6. Reduce heat to a simmer and allow soup to simmer for 2 hours or longer to develop flavor.

  7. Remove bay leaves when soup is done.

  8. Soup freezes beautifully.

  9. This recipe can be altered to taste by adding additional vegetables, leaving out the meat, etc. It's very forgiving!
