Very traditional vegetable soup with tomato/broth base

Recipe Ingredients for Vegetable beef soup #2

1 7/10 oz. beef, diced
3 onions, chopped
5 large carrots, diced
4 stalks celery
1 1/2 cups frozen corn
1 1/2 cups frozen peas
1 1/2 cups green beans
49 oz. chicken broth, no fat, low sodium
1 pint canned tomatoes
1/2 tsp sea salt
1 T olive oil
1 medium potato, diced
2 cups water
1 tsp black pepper

Recipe Directions for Vegetable beef soup #2

  1. Cook beef in slow cooker until tender.

  2. Chop all vegetables in small pieces. Use olive oil in large soup pot. Saute onions and celery and carrots until the onions are softened. Add chicken broth and tomatoes. Put in potato, corn, peas, and green beans. Add sea salt and pepper.

  3. Bring to boil, and reduce heat to a simmer. Let cook until vegetables are cooked, but not soggy.
