use last nights leftover roast to pull together this quick, healthy and tasty soup

Recipe Ingredients for Vegetable Beef Noodle Soup

1 lb cooked top round roast
16 oz. frozen mixed vegetables
3 cups vegetable juice
1 cup water
2 T beef bouillon
1/2 tsp salt
1/4 tsp pepper
1 1/2 cups macaroni

Recipe Directions for Vegetable Beef Noodle Soup

  1. Chop leftover roast

  2. Add water, tomato juice, bouillon, salt, and pepper to pot with chopped meat

  3. Add frozen vegetables and allow to come to a boil

  4. Add macaroni and allow to simmer for 20 minutes.

  5. Serve with salad and bread and ENJOY!
