Vegetable and Beef Chili Recipe

Makes 4 servings



A hearty vegetable and beef mix that is high protein, low-fat & low-carb. Goes well served with rice or other grain (I used steamed barley).

Recipe Ingredients for Vegetable and Beef Chili

16 ounce Ground Beef
1 zuccini, diced
3 small green pepper, diced
1/2 onion, diced
3 clove garlic
1 carrot, sliced
2 tbl olive oil
24 ounce canned tomato
6 ounce portabella mushroom
1 tbl basil, diced

Recipe Directions for Vegetable and Beef Chili

  1. In a large skillet saute onion and 3 garlic cloves in olive oil until brown. Add all vegetables and cook until soft.

  2. Add beef* and cook until brown, mixing in with vegetables. Season with cumin and/or cayenne pepper to taste.

  3. Add canned tomato and basil + simmer for 5-10min.

  4. *If you are using beef that isn't particularly lean (>10% fat) you can cook the meat separately and drain the fat before mixing with the vegetables.
