Vegetable Beef Barley Soup (Lo-Carb,Lo-Fat,Lo-Sodium)

Recipe Ingredients for Vegetable Beef Barley Soup

1 cup Barley
1 cup Frozen Corn
1 cup Frozen Green Beans
1 cup Diced Carrots
1/2 cup Diced Onion
1 1/2 lb Diced Stew Beef
12 cups Beef Broth

Recipe Directions for Vegetable Beef Barley Soup

  1. Boil Barley in 3 Quarts Water for 30 minutes

  2. Drain and rinse, remove starch build-up on sides of pan

  3. Repeat step 1 except cook for 10 Minutes.

  4. Drain and rinse, remove starch build-up on sides of pan

  5. Set Barley aside

  6. Add 12 cups Beef Broth, Beef, Fresh Carrots and Onion.

  7. Slow Boil for 10 Minutes

  8. Add Barley, Corn and Green beans

  9. Simmer for 15-20 minutes
