Recipe Ingredients for Vegetable Beef Barley Soup

1 1/2 lbs flank steak
4 tsp olive oil
2 cups diced onion
1 cup diced celery
1 cup diced mushrooms
8 cups low sodium beef broth
29 ounce diced tomatoes
8 cups water
4 cups finely sliced savoy cabbage
7/8 cup barley
2 turnips, diced
32 ounce frozen mixed vegetables
2 tbsp minced tarragon

Recipe Directions for Vegetable Beef Barley Soup

  1. Slice flank steak thinly. Sear in batches using a total of 4 tsps olive oil. Dice beef into small pieces and set aside.

  2. Stir in the onion, celery and mushrooms;scraping up browned bits and sauteing until softened.

  3. Add broth, water, tomatoes and tarragon. Bring to a boil.

  4. Add cabbage and simmer until softened.

  5. Add barley and cook until soft.

  6. Add vegetables and simmer until done.

  7. Serving size is 2 cups
