Bean soup with spinach, carrots, and potatoes

Recipe Ingredients for Vegetable Bean Soup

480 grams White Beans
0.25 cup Olive Oil
4 medium (2-1/2" dia) Onions
5 clove Garlic
822 grams Diced Tomatoes, No Salt Added
1 cup diced Potatoes, Red, Flesh And Skin
95 grams Celery
187 grams Carrots, Baby
298 grams Spinach
3.5 tsp Salt, Table

Recipe Directions for Vegetable Bean Soup

  1. Saute onions and garlic in olive oil.

  2. When wilted, add celery, carrots and potatoes.

  3. Boil till half tender then add tomatoes. and 3 cans of water.

  4. When potatoes and carrots are tender, add spinach and beans.

  5. Cook 5 minutes more.

  6. Season with salt and pepper.

  7. Serve hot.
