Recipe Ingredients for Vegetable Bean Salad

15 oz (1 can) black eyed peas, drain and rinse
15 oz (1 can) black beans, drain and rinse
4 oz pimentos
1 cup celery chopped
15 oz (1 can) pinto beans, drain and rinse
11 oz (1 can) corn
1 cup onion, chopped
1 tbsp water
1/3 cup olive oil
1/2 tsp pepper, ground
1/2 cup cider vinegar
1/2 cup sugar
1 tsp sea salt

Recipe Directions for Vegetable Bean Salad

  1. Combine the first 7 ingredients in a bowl.

  2. Combine last 6 ingredients in a saucepan. Bring to a boil; boil until sugar is completely melted.

  3. Add to bean mixture. Refrigerate and drain before serving.
