Vegetable and Bean Chili Recipe

This is a sweet chili (moderately spicy) with lots of veggies. High in fiber, good source of potassium.

Recipe Ingredients for Vegetable and Bean Chili

1 tablespoon Olive Oil
1 Yellow Pepper
1 Vidalia Onion
1/4 cup Cilantro
2 celery stalks
2 medium carrots
2 jalapeno peppers
1/4 cup lime juice
6 oz tomato paste
3 teaspoons salt
1/4 teaspoon garlic powder
2 teaspoon chopped dried onion
1 1/2 teaspoon cumin
1/2 teaspoon cayenne pepper
15 1/2 oz pinto bean
15 1/2 oz white kidney beans
15 1/2 oz dark red kidney beans

Recipe Directions for Vegetable and Bean Chili

  1. Seed Jalapeno! If you don't it will be extra spicy. Wash your hands carefully when you are finished!

  2. Chop all vegetables in food processor, sautee in 1 tablespoon olive oil

  3. Add 1/2 cup or so of water, lime juice, tomato paste and spices

  4. Add beans, freshly ground black pepper to taste

  5. Simmer and adjust seasonings if necessary (I think it's spicy, but if you like more spice add more chili powders)

  6. Serve about 1 cup over Gaba Brown Rice with some shredded cheese and a dollop of sour cream. Bon Appetit!
