A yummy and pretty easy stew. It is really hearty!

Recipe Ingredients for Vegetable and Barley Stew!

10 cup Vegetable Broth
2 cup Pearled Barley
8 oz Carrots, Baby
1 cup chopped raw Baby Bella Mushrooms Packaged
2 medium (2-1/2" dia) Onions
5 clove Garlic
1 serving Extra Virgin Olive Oil
2 tsp Curry Powder
2 tsp Salt, Table
0.5 tsp Pepper, Black
0.25 cup Celery Root

Recipe Directions for Vegetable and Barley Stew!

  1. Chop all the veggies into chunks.

  2. Saute the onions and garlic in oil for 5 mins. Then add the rest of the veggies.

  3. Add the broth.

  4. Add the barley once it's boiling. Simmer for an hour. Then either eat it or let it rest for a few hours or overnight.

  5. Enjoy!
