Recipe Ingredients for vegetable barley soup

10 cups water
28 oz tomatoes, crushed
16 oz Yellow Wax Beans
4 cups zucchini, sliced
6 leaves swiss chard
4 cups cauliflower, diced
2 cups bell pepper
1/2 cup white onion
1/2 cup carrots, diced
1/2 cup celery, diced
1 tablespoon pepper
2 teaspoons salt
1 tablespoon crushed red pepper
2 tablespoons olive oil
1 1/2 cup barley

Recipe Directions for vegetable barley soup

  1. Cut all vegetables before beginning

  2. Heat oil in pan

  3. Saute mirepoix and green peppers on low until onions are translucent

  4. Steam cauliflower in microwave for 5 minutes until tender

  5. Add zucchini, swiss chard, yellow beans, cauliflower(drained), and tomatoes into pot

  6. Mix well

  7. Add 10 cups of water and mix well

  8. Add salt, pepper, red pepper and bring to boil

  9. Turn on low and add barley

  10. Let simmer for 35-45 minutes.

  11. Serve with 1 teaspoon pesto if desired
