Recipe Ingredients for Vegetable Barley Soup

2 cups Celery
1 cup Leeks, (Bulb And Lower Leaf-portion)
1 cup Onions
3 tbsp Garlic Powder
1 cup Peppers, Sweet, Red
1 cups Cabbage
1 cup Beans, Snap, Green
1 cup Mushrooms
1 cup Corn, Sweet, Yellow
2 cups Barley
1 cup Carrots
175 oz Soup, Chicken Broth
2 cups Soup, Chicken Broth
2 cups Water

Recipe Directions for Vegetable Barley Soup

  1. Soak barley one day ahead

  2. cut up vegies into bite size pieces

  3. mix barley and vegies

  4. add: 1/4 teaspoon fennel and tyme

  5. bring to boil and simmer for 2 hours until rich and thick
