Recipe Ingredients for Vegetable Barley Soup

1.5 cup Barley
2 oz Extra Virgin Olive Oil
6 stalk, large (11"-12" long) Celery
6 medium Carrots
4 medium (2-1/2" dia) Onions
4 cup slices Parsnips
102 oz Diced Tomatoes
8 cup, chopped Kale
30 oz Peas Chick

Recipe Directions for Vegetable Barley Soup

Cook barley. Heat oil in Dutch oven. Add carrots, celery, onion, parsnips, 1 tsp. salt, 1/2 tsp. pepper. cook, covered, stirring occasionally, until veg. soften, 20-25 mins. Add kale, simmer until tender, 5-6 mins. Stir in chickpeas and cooked barely and cook until heated through.
