Recipe Ingredients for Vegetable Barley Soup

3 cups water
1 vegetable bouillon cube
1/2 cup zucchini
1/2 cup carrot
1/8 cup onion
1 stalk celery
1 clove garlic
1/3 cup barley
1 tomato
1 cup garbanzo beans
1/2 cup spinach
1/4 teaspoon sugar
1/4 teaspoon curry powder
1/4 teaspoon worcestershire sauce
1/4 teaspoon paprika
1/4 teaspoon dried parsley
1/8 teaspoon black pepper

Recipe Directions for Vegetable Barley Soup

Pour the vegetable broth into a large pot. Add the barley, carrots, celery, tomatoes, zucchini, garbanzo beans, onion, and bay leaves. Season with garlic powder, sugar, salt, pepper, parsley, curry powder, paprika, and Worcestershire sauce. Bring to a boil, then cover and simmer over medium-low heat for 50-60 minutes. The soup will be very thick. You may adjust by adding more broth or less barley if desired. Remove bay leaves before serving.
