Recipe Ingredients for Vegetable and Barley Casserole

4 egg Organic Eggs
3 1/2 cup Milk, Nonfat, Fluid
4 oz Extra Sharp Cheddar
1 tsp Garlic Powder
1/2 tsp Pepper, Black
1/10 tsp Nutmeg, Ground
1/10 tsp Cayenne
2 cup Barley, Pearled, Cooked
0.33 cup, chopped Onions
0.67 cup, diced Celery
1 1/2 cup chopped raw Baby Bella Mushrooms Packaged
1 1/2 cup, chopped Broccoli
2 cup Frozen Cut Leaf Spinach

Recipe Directions for Vegetable and Barley Casserole

  1. Vegetable/grain mixture: Chop and saute all vegetables until tender. Combine with barley. Set aside to cool.

  2. Custard: Whisk together milk, eggs, and spices until smooth. Stir in shredded cheese.

  3. Stir vegetables into custard. Poor into greased 10"X15" or 2 8"x8" baking dishes. Bake 350 for 1 hour, or until custard has set.
