Recipe Ingredients for Vegetable Bake

1 medium raw Onion Red
2 tomato Tomatoes, Red, Ripe
18 grams Garlic
2 medium Squash, Summer, Zucchini, Includes Skin
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
200 grams Aubergine
0.5 cup Olive Oil
500 grams Potatoes, Boiled
0.5 cup Parsley
500 grams Passata Sauce

Recipe Directions for Vegetable Bake

  1. Preheat oven to 190 degrees centigrade.

  2. Slice all the vegetables quite thickly.

  3. Layer the potatoes in a single layer in a large baking tray. Drizzle with olive oil and season with salt and pepper.

  4. Scatter with the garlic and courgette and season again.

  5. Layer the aubergine, then peppers, then onions, adding seasoning between each layer. Scatter over half the chopped parsley, then layer the tomatoes and add the rest of the parsley.

  6. Cover the top with the passata and the rest of the olive oil. Cover with foil and place in the oven for approx. 1 hr 30 mins.
