Frittata full of vegetables you won't even miss the cheese!

Recipe Ingredients for Vegetable and Bacon Frittata

6 large eggs
1/4 cup skim milk
4 strips bacon, cooked and roughly chopped
1/2 tablespoon Olive oil
1/4 cup white onion, diced
1/4 cup celery, diced
1/4 cup asparagus, sliced into 1/2-inch sticks
1 large zucchini, sliced into half-moons
1/4 cup tomato, chopped
1 tablespoon fresh basil, chopped
1 tablespoon fresh oregano, chopped
1 tablespoon fresh thyme, chopped4

Recipe Directions for Vegetable and Bacon Frittata

  1. Cook onions in olive oil until tender

  2. Add bacon when onions are almost done

  3. In a medium bowl, whisk eggs and milk

  4. Add asparagus, zucchini and celery to pan. Saute 4 to 5 minutes.

  5. In a small bowl mix together italian seasonings and chopped tomatoes. Add mixture to pan.

  6. Add the egg mixture, mixing occasionally to bring cooked bottom to top. Cook for 4 to 5 minutes until the bottom has set and browned.

  7. Place the frittata into the oven and broil until golden and fluffy. Remove from pan and cut into 4 portions.
