Recipe Ingredients for vege lunch soup

36 grams Vegetable Stock
400 grams Tomatoes
156 grams Potatoes, Boiled, Cooked In Skin, Flesh
1 cup, chopped Carrots
1 cup, diced Celery
1 cup, chopped Onions
100 grams Spaghetti
2 cloves, raw Garlic
1 grams Oregano
30 grams Pesto Sauce

Recipe Directions for vege lunch soup

  1. Heat some spray oil in a pan on a low heat and sweat off the diced onion and garlic.

  2. Add diced potato, carrot and cellery to the mix and continue to sweat - add more spray oil as required.

  3. After about 15 minutes add stock and brocken spaghetti and simmer for a further 1o minutes or until the pasta is cooked.

  4. Add tomatoes bring back to the boil and stir in a spoonfull of pesto to serve.
