Eve-lyne's homemade recipe, can add potato, carrot, pasta, broccoli for a more rounded soup. Particularly tasty with melted skim milk cheddar cheese and reduced-sodium tortilla chips sprinkled over the top. MMMM, yum ;)

Recipe Ingredients for Vegatable soup

12 cups of water
2 cups of tomato juice
1/2 head of cauliflower
1/2 head of cabbage
1 green bell pepper
1 red bell pepper
1 dash of salt
3 tbsps of chicken stock

Recipe Directions for Vegatable soup

  1. In a large cooking pot, combine water, tomato juice, and chicken stock over medium- high heat.

  2. Add cauliflower, cabbage, and bell peppers as liquid comes to a boil.

  3. Add salt and cover for 20-25 minutes until veggies are tender
