vegan "creamy" tomato soup (the thickness comes from potatoes)

Recipe Ingredients for veganomicon tomato soup

2 tbsps olive oil
1 medium onion
3 cloves garlic
1/2 tsp rosemary (dried)
1/2 tsp thyme (dried)
1/2 tsp oregano (dried)
1 tbsp black pepper (freshly ground)
2 tsps salt
1 lb potatoes (yukon golds or similar)
1 cup sun-dried tomatoes (not in oil)
6 cups water (or veggie broth)
28 ounce tomatoes (fire-roasted)
2 tbsps lemon juice

Recipe Directions for veganomicon tomato soup

  1. preheat large saucepan over medium heat. add olive oil and onions; saute until translucent (5-7 minutes). Add garlic & herbs. Saute 1 min.

  2. add potatoes & sun-dried tomatoes. pour in water/broth. cover & bring to the boil, then lower heat & summer for about 20 mins.

  3. add tinned tomatoes & heat through. purée thoroughly. add lemon juice & adjust salt/pepper to taste.
