Recipe Ingredients for Veganomicon Lentil Soup with Tarragon and Thyme

1 T olive oil
2 cups onion
1 cup carrot
1 1/2 cups tomatoes
3 T garlic
2 tsp tarragon
1 tsp thyme
1 tsp paprika
3 cups vegetable broth
3 cups water
2 cups lentils
2 bay leaves
1 tsp salt
1 tsp black pepper

Recipe Directions for Veganomicon Lentil Soup with Tarragon and Thyme

  1. Saute onions and carrots for about 10 min until onions have browned a bit.

  2. Add garlic, tarragon, thyme, and paprika, and saute for 2 more minutes.

  3. Add tomatoes and a little water if necessary, stir to deglaze the pot. Cover and cook for 5 min.

  4. Add water and vegetable broth, lentils, bay leaves, salt, and pepper, then cover and bring to a boil. Lower heat to simmer and cook covered for about 45 minutes until lentils are tender.
