From PETA's Vegan College Cookbook, this recipe is super fast & easy! The only cooking needed is from a microwave! It's really tasty(:

Recipe Ingredients for (VEGAN)Classic Potato Salad Fake-out

1/2 cup soy milk
3 tablespoons lemon juice
1/4 teaspoon paprika
6 tablespoons corn oil
1/4 teaspoon salt
4 yukon gold potatoes
1 1/4 teaspoon mustard
1 cup chopped celery
1/2 cup chives

Recipe Directions for (VEGAN)Classic Potato Salad Fake-out

  1. Mayonnaise:Make vegan mayo by putting soy milk, lemon juice, salt, paprika,and 1/4 teaspoon of mustard in blender and put on lowest speed. Gradually add in vegetable oil (I used corn, but any will do!) until mixture starts to thicken. Continue to blend until thickened. This makes about a cup, which is what is needed for the recipe!

  2. Now for the actual potato salad:Wash the potatoes and stab them with a fork. Place in microwave for 8 minutes of until tender. You should be able to stick a fork in them, but they shouldn't fall apart. Let cool and cut into cubes. In a large bowl, mix together mayonnaise, remaining mustard, celery, and chives, Add the potatoes and toss until well coated. Add salt and pepper. Chill and serve.
