Recipe Ingredients for Vegan Zuppa Toscana

1 medium Onion
3 cloves Garlic
4 cups Vegetable Broth
3 Russet Potatoes
14 oz Sausage
3 cups Soy Milk
15 oz Mushrooms
1 tablespoon Nutritional Yeast
3 cups Kale

Recipe Directions for Vegan Zuppa Toscana

  1. In a large stockpot, cook chopped onions on medium heat about 5 minutes. Add 1 tbs broth if sticking. Add minced garlic and cook 1 minute more.

  2. Add vegetable broth and chopped potatoes, and cook on medium heat about 20 minutes, until tender. In the meantime, slice sausage into 1/4 inch rounds and slice the mushrooms, and cook in frying pan until browned.

  3. Once potatoes are cooked, add kale, milk & nutritional yeast. Simmer 5 minutes. Add sausage and mushrooms, and stir until combined.
