Recipe Ingredients for Vegan Zucchini Crab Cakes

2 medium zucchinis
2 slices wheat bread
1/4 cup red onion, minced
1 tsp old bay
1 tbsp olive oil

Recipe Directions for Vegan Zucchini Crab Cakes

  1. Grate zucchini using medium-sized side of box grater. Allow zucchini to drain in mesh strainer for about an hour.

  2. Heat oven to 400F.

  3. Blend bread into fine crumbs. Toast with a bit of olive oil in a non-stick skillet over medium heat until brown and crisp.

  4. Mix bread crumbs, onion, old bay, and Vegenaise together in large mixing bowl. Add in zucchini and combine thoroughly.

  5. Heat olive oil in non-stick skillet. Form mixture into four evenly-sized patties. Brown patties on each side until nicely browned.

  6. Transfer patties to over and cook until warmed through and crispy.
