Recipe Ingredients for Vegan Zucchini Bread

3 tbsp flaxseed, ground
1/2 cup water
1/2 cup vegetable oil
1/2 cup unsweetened applesauce
1 tbsp white vinegar
2 cups white sugar
2 cups zucchini, grated
3 cups all-purpose flour
2 tsp ground cinnamon
1/4 tsp nutmeg
1 tsp baking soda
1/4 tsp baking powder
1 tsp salt

Recipe Directions for Vegan Zucchini Bread

  1. Preheat the oven to 325 F. Lightly grease two loaf pans, 4 mini loaf pans, or 2 muffin tins.

  2. In a large bowl, mix the egg replacer and water until thick and creamy. Add the oil, applesauce, vinegar, and sugar, and combine. Stir in the zucchini and vanilla.

  3. In a separate bowl, sift together the flour, cinnamon, nutmeg, baking soda, baking powder, and salt. Stir the dry mixture into the wet mixture until just combined. Do not overmix. Divide the batter into the prepared pans, and bake for 60-70 minutes for standard loaves, 40-45 for mini loaves, or 30-35 for muffins. Check for doneness by inserting a toothpick in the center.
